Gilda began in Spain, where founder and owner Jon Warren lived for 15 years. When Jon arrived in San Sebastian, he was captivated by the vibrant culture. Locals and visitors alike squeezed into the pintxo bars; amidst the happy buzz of laughter and conversation, people were no longer strangers but a community of friends, united by a shared appreciation for life and the food which sustains it. 

The Gilda – the traditional pintxo enjoyed between sips of local wine – heralded an evening spent in the most joyful way: with friends and family around the table. High-quality ingredients were transformed into a dish far greater than the sum of its parts; this simple bite of anchovy, green olive, and pickled pepper became a symbol of what life is all about.

With this ethos, Jon was inspired to open Gilda Bakery. The humble materials of flour, water, and salt, transformed by the hands of the baker into golden loaves that nourish and satisfy. A passionate team who put quality first with commitment to the time-honoured artisanal craft of baking. An open bakery buzzing with laughter and conversation, where locals and visitors alike can see their food being made, even ask a question of their baker, and choose something delicious to take home and share.
